Maine lobster is the most familiar of the lobster varieties. Be sure to purchase the lobster alive. An alternate way of preparing it for cooking is to freeze it before splitting it and cleaning it thoroughly. It is assumed that lobsters are typically boiled alive, but this is not necessary. Another method of preparation is steaming or broiling and these methods maintain more of the succulent flavor, which is complemented with lemon and butter.
