Shrimp are considered crustaceans because of their limbs. There are several varieties available and as you become familiar to the different types, you'll be able to choose the best fresh shrimp for your dish. As with all seafood, it's important that you select the freshest available and with shrimp, and you must understand the sizing of them. Clean and de-vein them properly for the best presentation and taste.

Stephanie Izard (Season 4)
